Grated apple replaces the fat and adds just a hint of sweetness to this lightly spiced breakfast sausage. It won't dry out if you cook it slowly, as directed here. Be sure to use ground white meat, as regular ground turkey can be quite fatty.
- ½ pound ground white-meat turkey
- ½ teaspoon poultry seasoning
- ¼ teaspoon rubbed sage
- ¼ teaspoon ground cinnamon
- 1/3 cup grated peeled apple, such as Golden Delicious
- Freshly ground black pepper
- 1 tablespoon canola oil
MIX the turkey thoroughly with the poultry seasoning, sage, cinnamon, and apple. Season highly with black pepper.
HEAT a large nonstick skillet on medium; swirl the oil around the hot pan. Cook a small bit of the sausage mixture, so you can taste and adjust the seasonings; then form the rest into 8 thin patties. Cook for 2 to 3 minutes per side, until browned.
